As a kid, MGS2 was my favorite. In college, MG: AC!D, and now as an adult, MGS:V.
I think that Kojima has gotten less absurd, but more pretentious, and I'm fine with that; it's hard to appreciate video games much otherwise.
My favorite boss fights are: Vulcan Raven in MGS1, Fat Man and Metal Gear Ray in MGS 2, and The End in MGS3.
Idk. Death Stranding was absurd even by Kojimas standards...
Yet somehow less absurd than the Colonel in MGS2 trying to stop Raiden from reaching the final boss by talking to the player and telling them to put down the controller and go outside to enjoy nature. :D
He's always gonna be weird, but he used to be more fun about it.
I think he's moved away from absurdism, and more towards surrealism: less existential and more fantastical or dream-like: Amelie and BTs and BBs, versus FOXHOUND or the Sons of Liberty.
One of my buddies got metal gear for PlayStation when it was first released. I remember marvelling at the way that the enemies reacted to the footsteps and noises you made splashing through puddles. It was just something we had never experienced before. So much tension just trying to get through that first area to the elevator. And the cyborg ninja? Get outta here so fucking cool!
I have never player any of these games but they seem really fun and I think a bit goofy at times too?

Metal Gear is a series that will turn on a dime from being deathly serious into breaking the fourth wall for a joke or gameplay reasons. They're amazing.

I'd recommend playing them in release order. You can skip the MSX games and go right to Metal Gear Solid, but these games do build on each other. MGSV is probably the best-playing game in the series, but it has the least of the story bits that the series is known for.
My favorite is Metal Gear Solid (PS1 version). This game is just groundbreaking in so many ways, and the story is just so earnest and campy. There are some incredibly emotional moments and the final battle on top of the Metal Gear is absolutely insane.
Metal gear 3 is my favourite, it's got the best combination of gameplay and story of them all. Probably the best boss fights of the series, so many good ones, I love the end and the fear. Fighting Volgen was great as a fight and he was a brilliant villain. The Boss was possibly the best bit, really escalated the game. 2 and 4 are both great. 4 felt like a good close to the series, though it had far too many cutscenes, I think it was more of a movie than a game. 5 was the best gameplay in the series by far though the story was unfinished and Quiet was silly, "You'll feel bad when you learn why she's practically naked". Bullshit just admit you want a sexy lady in your game that's still allowed.
MGS1 is my favorite of the series and is one of my favorite stories in gaming. It's an incredibly mature story for all the wackiness thats still in it. The music is perfection. The performances are incredible. The characters are great. I love everything about this game. I think, somehow, the low poly graphics and textures adds a lot to the realism and grittiness of the game, despite being fairly arcady in gameplay. At this point in the story, almost everything that happens in it is believable, other than the supernatural parts (which are, in this game, actual supernatural powers, which adds a whole new layer of mystery!) I HATE how over explained everything became in MGS4 and MGS5, (and to some extent, mgs3 even.) I think MGS4 kind of ruined the series for me, even though mgs4 has my favorite gameplay. MGS5 just felt like a Ubisoft collectathon game to me, and vocal parasites can lick my ass with how dumb it is. It has good moments, but it feels rather aimless compared to MGS1-3.
1 has the most serious tone, but still has some goofiness and arcadiness that really meshes well with the story and visuals somehow. 2 and 3 stayed strong with the story, both being more goofy, but also having deeper meanings and plots. I like 1-3 a lot, and even 4 is a fun romp, but 5 just could not hold me. Ground Zeros was great! But Phantom Pain is just a slog for me.
Our opinions match up almost perfectly! I adore MGS1 so much. The amount of incredible moments in that game is just staggering. My personal favorite is the death of Sniper Wolf and the fight on top of the Metal Gear + the ending!
