Have you been to Victor Harbour? Or anywhere on the Limestone coast? Nice drive at this time of year. Whale watching etc.

Nope I haven't spent any time in SA besides Adelaide and traversing to/from it by car without detouring. Could definitely be an option though. FNQ is nice and all but it is a lot of driving to pack into a week.

Don't miss Coffin Bay and the oysters. Particularly as a lot of Tassie oysters are dying right now so won't be cheap or easy to get for some time.
