made a.... I dunno what your call it. One Pot? Veg and meat curry? Ratatouille? Whatever, made a thing last night. Not a huge veg guy, but cause it was all mixed in with some chorizo and chicken it was amazing. Woke up still thinking about it this morning. Didn't even follow a recipe, just took some inspiration from a YouTube video and made some changes.
There's an Australian youtuber called OnePotChef if you want to continue down this path

I'm gonna write the recipe down. SHOULD be able to replicate it.

I've suffered from this too. And the disappointment on the fams faces when it's not the same as last time. I can't even remember what was in it!
