I bought a Lifetime Teton angler kayak last year and absolutely love it. Very stable and plenty of room for gear/poles. I can even fit my dog on the front.
It looks like they run upwards of 500USD but I found mine on sale and they knocked off a damaged discount for a scratch on the bottom which brought it down to about $300. Keep an eye out for seasonal sales.

Thank you for the recommendation. That fits my budget too. Are you able to attach pole holders in the back?
There are two pole holders near the back and also mounting tracks for additional accessories along both sides.
Only thing I can really add here is that you should definitely opt for a sit-on-top rather than a sit-in.
I have the latter and I'm making it work until I can get myself a "bifl" fishing yak in a year or three, but every so often I have the opportunity to fish from a sit-on-top and even with zero modifications, it's just so much more convenient.
