I think saber might be an option; can't test it personally since i dont' have a samsung.

TiddlyWiki via TiddlyPWA is what I use. I don't know if it supports the S Pen and the notes are all saved in a single HTML file.

Saber doesn't have S-pen support but you can save notes where you want (can even sync to Nextcloud).

I've been looking for this solution as well.

I have a Galaxy Tab S6 Lite and the S-pen works fine

The S-pen "works" with it but the button on the pen doesn't work with the app. Hence it's not 'supported.'

You can't hold the button for erase.
