But I don't see any incentive for me to go back to a subscription based app for lemmy now that we've got so many great Apollo-like apps for it. I'm currently using Memmy and it's amazing

Well, this is true, it is gonna be an interesting experiment, if he decides to get in at this point he needs to deliver the best app ever, that or have some good incentives to reconsider, at the end of the day we users are the only winners.
