I really like getting stuff I’ve read out of my feed, but do new comments cause those items to come back in as unread? without that I’m not sure how useful this is.

No, you’d have to interact with the post to keep track of it. Save it or comment on it. I wouldn’t want new comments unmarking my read posts. If I didn’t care about it when I scrolled passed it, I don’t care about the comments.

I did like how Apollo, towards the end, highlighted any new happenings on posts and within posts you returned to with glyphs and number counts of new comments though.

That’s helpful. So if I want to track something but not comment on it, saving it will keep it in my feed even though I read it. What if I up vote it. Does that count as interacting?
