If it's still relevant, maybe this will work:
- Open gpedit (if you're on Windows Home you can put gpedit on the system through CMD - scroll to the "Run Command Prompt" section)
- Navigate to Computer Configuration > Administrative Templates > Windows Components > Windows Update
- In the "Legacy Policies" folder:
- Enable "No auto-restart..."
- (that folder also has a policy to "Allow Automatic Updates immediate installation" but apparently it doesn't do anything according to Microsoft)
- In the "Manage end user experience" folder:
- Disable "Always automatically restart.."
- Enable "Configure Automatic Updates" and select "4 - Auto download and schedule the install", then select "Every Day" and choose an hour for the installation
- Enable "Display options..." and select "2 - Disable all notifications..."
- Enable "Turn off auto-restart..." and set the active hours when you don't want it to restart
edit: adding that you can also use a program like WAU Manager to automatically download and install the updates in a specific time (screenshot for the settings, click on Save and Apply after choosing the settings)
