I am by no means an expert, but I have found reducing the leaf to water ratio reduces the bitterness. Same with reducing brew time and temperature.

Yeah, I'm messing with the balance each time now to try and reduce bitterness without losing the flavor. The next time I tried with about 3/4th the amount of leaves. Doing 180F at 20 seconds to start with a gradual increase each steep seems like the right area so far!
