Not sure if this is niche at all (since video gaming essays are a dime a dozen), but ThorHighHeels does great videos on video games and gaming eras that are generally ignored by most people. Stuff like the fonts used in PS3 games, untranslated Japanese life simulators, janky handheld games, and all that. His video topics usually stray almost instantly from the title, too, so they're always a fun surprise.

He's a musician and self-styled artist, so all of his takes and video formats are something I don't see anywhere else.

Thank you for your service. This has been my slop of choice as of late and always interested to find obscure stuff

I don't know how niche they are anymore, but I really enjoy defuntland and QuintonReviews. Defunctland talks about old attractions at amusement parks, and recently had a hit with a video about the Disney channel jingle. QuintonReviews is a review channel that has, for the past year or two, reviewed a bunch of Nickelodeon tv shows, culminating in a discussion about Jeanette McCurdy's book (CW for SA, EDs, just about every awful thing you can think of.)

Breadtube if it didn't suck.

Post videos you genuinely enjoy and want to share, duh. Celebrate the diversity of interests shared by chapochatters by posting a deep dive into Venetian kelp farming, I dunno. Also media criticism, bite-sized versions of left-wing theory, all the stuff you expected. But I am curious about that kelp farming thing now that you mentioned it.

Low effort / spam videos might be removed, especially weeb content.

There is a cytube that you can paste videos into and watch with whoever happens to be around. It's open submission unless there's something important to commandeer it with at the time.

A weekly watch party happens every Saturday (Sunday down under), with video nominations Saturday-Monday, voting Monday-Thursday. See the pin for whatever stage it's currently in.
