I'd guess that situation is one where you're supposed to use the "hit unconcious" toggle and not go for a complete kill?

Yeah, probably, I used magic missiles. She didn't make it. lol. That said, still a bug, as she should never be able to get into the state I've described.
Unfortunately the non-Lethal toggle doesn't work for spells or secondary damage sources like the corrosive ring.
Something similar happened yesterday in a fight. All was good, could let her walk.. but not attack. I saved the game and loaded that save. Then it worked again.
Before that we were talking to goblins and I messed up.
I tried through multiple saves to get her working right again, but no luck so in the end I just reloaded a save from before the fight and I since I wasn't keen on continuing the romance anyway (It happened by accident in the first place) I turned her down when I redid it.
This keeps happening to me as well. The way around it is to quicksave and quickload right then and there. Thankfully it lets you do that anywhere because it happens a lot. I didn't kill her or anything tho. She broke entirely on her own. Now almost every 3rd encounter, when it's her turn she is stuck in a dialogue state with no text (the text background appears) and the skip button does nothing.
That unfortunately didn't fix it for me. I had to revert to an earlier save.
