I can vacuum seal and ship within the US. Definitely totally probably worth it.

You may, however IIRC, I played this by ear and used a sourdough starter for my rising agent. Probably 30% hydration. I did NOT add enough salt. The topping is La Tourangelle EVOO and Everything Bagel spice. Maybe 2 rises, one in the fridge. Sorry I'm probably not being too helpful.

I use this recipe and it is absolutely my most requested loaf of bread I make. More than one person calls me up to ask that I make it.
Make sure you make the butter topping, get some nice flaked salt (I use wild garlic flake salt).
If you’re new to bread the best thing you can do for yourself is get a scale and weigh your ingredients.
And practice a lot
