This is the first I've heard of the dish but that looks delicious! Did you add any spices?
Just salt and pepper. I googled around and it looks like some recipes use sauerkraut instead of raw cabbage. Also there's a big variation in the kinds of meat you can add. Some recipes use apples as well as beets. It really feels like a "throw whatever you've got in a pot and cook it slow" recipe. I had something really similar at the Rainbow Drive-In in Honolulu (pork, cabbage, onions, potatoes with obligatory macaroni salad) and it kind of blew my mind.
I'd like to try adding a bay leaf or two at the very least next time, and I'm going to lobby hard for sauerkraut instead of raw cabbage. Some apple juice/cider vinegar would probably work too?
Sauerkraut sounds like a perfect addition to this dish! It seems to be a very versatile meal so you could probably add any flavour that you like. A great one for feeding a large group while camping I'd imagine.
