Additionally, you may be more familiar with RHEL or CentOS because you worked with them in your career, but more familiar with tinkering/fixing Ubuntu becuase you’ve used it more personally and to learn.

YES!!! This is exactly the case! And as you say, probably the two options are very similar when it comes to hosting websites. I've used Apache on both.
