As far as I know for USD, It's a hassle to carry stacks of $100 bills in certain scenarios. Why can't there be more like $500, $1,000, or $10,000 bills?

There were, but both banks and the government would prefer for large holdings and transactions to be done through banks and not by cash. At that point money can be numbers on balance sheets rather than physical bills.
