Being able to touch / hold items without being instantly marked as a thief.
They've definitely had it work that way at least once. If they want to stop you from just "grabbing" an item and walking out the door with it, make a trigger area where if the item leaves a specific area, then it triggers a theft. They can even allow you to just take items from a store into your inventory, and then talk to the shop keeper to pay for it, and only count it as theft if you try to exit the store with the items.
