I know that Librewolf ships with privacy-enhanced defaults, but what will I lose in terms of privacy if I launched a Librewolf profile in Firefox?

I think it will work. I use profiles to "bootstrap" firefox configurations whenever I do a new install so I don't need to go manually configure settings and install extensions. If Librewolf settings are done on the profile level, I'd think it would be identical if moved over to FF, unless they are different versions and there are settings that exist in one and don't on the other.
