I'm sure every Italian in a 2000km radius is gearing up to tell me why I'm wrong for using charred scapes in this otherwise authentic carbonara, but they tasted good so...

You are free to re-imagine every dish. The fact that we (italians) may have developed a dish does not give us any reason to tell other people how to eat their food. Just know this: italians are the third importers of kebab in europe, italy is the country in europe with the highest number of "all you can eat chinese/japanese" stores. We really love to mix our culture to other people food, and you should feel free to the same!

I would only say. "It is not a carbonara". But: Pasta dish or Pasta with.... Yes sir.
