Let's smoke some meat

First time making a brisket, learned some lessons and hopefully next time turns out better.

Upgrade from a free electric bullet smoker with no temp controls. Usually worked fine, till I had a brisket and two racks of short ribs and the temp went to 500F and I had to finish in the oven.

What it is: plain ol' turkey legs

What it's on: Weber 18" Kettle

What's under it: standard charcoal and hickory blocks

This pic was a while ago, and they came out great. I don't have space for a full smoker, but like the saying goes 'do the best you can, where you are, with what you've got.'

Got this and 2 propane tanks for $50 on Craigslist. Excited to try it out.
