If you want to watch some of the series, out of the new ones Strange New Worlds is really great. Discovery's OK too but for my tastes it's a bit too Super Serious all the time, and the queer representation has a bit of a "bury your gays" tendency to it, where Strange New Worlds is more lighthearted and more like the older series, and queer characters aren't quite as on-the-nose. The animated series Lower Decks is great but half the jokes are Trekkie in-jokes and it might be more fun if you're already "in", so to speak.

The original series from the 60's is a bit campy and might not be the best place to start (unless you're a fan of camp!). The Next Generation from the early 90's starts off pretty campy too but gets better over time and is where the screencap in this meme came from. Deep Space 9 that came out later in the 90's is my personal favorite even though I only really got into it just a few years ago.

Out of the movies the ones made in the 2000s are all frankly a bit blah, but I love the older ones even though some of them objectively weren't all that great (I just get all nostalgic watching them so I can't help but love them.)

In Yurop you can watch Trek stuff on SkyShowtime at least, and I think US folks can watch them through Paramount's own streaming service. Dunno about the rest of the world unfortunately. Of course hoisting the Jolly Roger is also a perfectly fine option.
